ArticlesWhat Can We Freeze? - Part 2

Soups and liquids

Has it ever happened to us that we cooked a big quantity of soup and it seemed that we wouldn’t be able to eat it? In these situations it is a very good idea to freeze a part of it while still fresh. We will be really happy next time when we don’t have to cook it, but to take out from the freezer and eat it in a really short time. Of course, we can freeze other soups and many different liquids as well. We probably heard it already that we can freeze tea, lemonade or coffee instead of ice cubes, this way our beverages will not be watered when they melt, but did you know that we can also freeze the remaining wine or champagne as well? The best is to pour them into ice cube trays, this way can be easily added to your meal when cooking or to cocktails.

Vegetables and herbs

Vegetables can stay in the freezer up to a year, we can freeze onlion, garlic, pumkin or gourd, grain maze or corn on the cob with leaves, soup vegetables, like carrots, parsley, celery ot kohlrabi. If we want to freeze leafy vegetables like kale or spinach, first we need to throw them in boiling water, them immediately in ice water, then dry them and then can be frozen. Avocado is not advisable to be frozen in slices for example, however, you can freeze avocado puree, and you don’t have to stress about it going bad.

Herbs can be frozen in various ways, or scattered on cooking paper, then poured together in a container, or in ice cub trays filled with water, olive oil or butter, depending on later use. Some herbs turn brown when frozen if they are not in liquid, so the latter methods seem to be more secure.

Fruits and nuts

One big advantage of freezing fruits is that we can buy a lot in season and eat them all year round. It is easier to freeze them than put them in bottles. What is worth paying attention to is that high water content fruirs may not be used for anything after thawn. If you need them in a shake for example, then this doesn’t matter. It’s good to freeze them separately as well on a baking sheet and then put them together, this way we can dose them as needed. We can also freeze banana with its peel or in slices.

Did you know that nuts can be frozen as well? Of course, nuts doesn’t go bad fast, but freezing them prevents rancidity, so we can keep them up to 1-2 years.
